Method

Sandwich

1

Prepare bacon

If bacon is not already cooked, cook 2 strips of bacon until crisp using your preferred method: pan-fry over medium heat for 6–8 minutes, flipping until evenly browned, or bake on a foil-lined sheet at 400°F (200°C) for 12–15 minutes. Drain on paper towels and set aside.

2

Assemble sandwich

Lay the two slices of bread flat. On one slice, spread 2 tablespoons creamy peanut butter evenly to the edges. On the other slice, spread 2 tablespoons jelly/jam evenly. Place the American cheese slice on top of the peanut-buttered bread. Top the cheese with the two cooked bacon strips, arranging them to cover the cheese. Close the sandwich with the jelly-topped slice, jelly side down.

3

Grill sandwich

Heat a skillet or griddle over medium-low to medium heat. Spread the softened butter evenly over the outer faces of both bread slices (or butter the pan lightly). Place the sandwich in the skillet. Cook gently for 3–4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted. If the bread browns too quickly before the cheese melts, lower the heat and cover the pan for 1–2 minutes to trap heat and help the cheese melt.

4

Rest and serve

Remove the sandwich from the skillet and let it rest for 1 minute to set. Slice in half diagonally if desired and serve hot so the cheese is melty and the peanut butter and jelly are warm and gooey.
