Pita Sandwiches

Prepare vegetables

Wash the cucumber and tomatoes. Slice the cucumber into 1/4-inch rounds (or half-moons if preferred). Core and slice the tomatoes into 1/4-inch thick slices. Peel the red onion and cut into thin rings or half-rings. Place cucumber, tomato, and onion in a medium bowl.

Dress vegetables

Drizzle 2 tablespoons olive oil and 1 tablespoon lemon juice over the sliced vegetables. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Toss gently to combine and set aside to marinate while you make the aioli and toast the pitas (5–10 minutes) so flavors meld.

Prepare feta

Crumble or thinly slice the feta into bite-size pieces. If feta is very salty, rinse briefly and pat dry. Place in a small bowl and set aside.

Warm and split pitas

Preheat a skillet or griddle over medium heat. Lightly brush or spray the pita faces with a little olive oil or water and warm them 30–45 seconds per side until pliable and slightly toasted. If using pita pockets, carefully slice open to form pockets; if using rounds as buns, keep whole and slightly press to open a pocket for fillings.

Assemble sandwiches

Spread about 1 to 1 1/2 tablespoons of garlic aioli inside each pita half or on both sides of the pita round. Divide marinated cucumbers, tomatoes, and red onion evenly among the 4 pitas. Top each with roughly 2 ounces (about 2 tbsp crumbled) feta per pita. Sprinkle with chopped parsley or dill and a pinch of red pepper flakes if using.

Garlic Aioli

In a small bowl combine 1/2 cup mayonnaise, 2 minced garlic cloves, 1 teaspoon lemon juice, 1 teaspoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk until smooth and slightly glossy. Taste and adjust seasoning — add more lemon for brightness or more garlic for punch. Refrigerate until ready to assemble (can be made up to 24 hours ahead).

Finishing

Serve the pitas immediately while the bread is warm and fillings are bright. Offer extra garlic aioli and crumbled feta at the table. Leftover components (aioli, dressed vegetables, crumbled feta) keep separately in the refrigerator for 2–3 days.
