Make the sauce

In a small bowl combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, garlic powder and salt. Whisk until smooth. Taste and adjust salt or vinegar. Cover and refrigerate at least 30 minutes to let flavors meld.

Caramelize onions

Heat 1 tablespoon butter in a skillet over medium-low heat. Add thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until softened and golden brown, 15–20 minutes. If onions are slow to color, add 1/2 teaspoon brown sugar and increase heat slightly for a few minutes to deepen color. Remove from heat and set aside.

Form patties

Gently divide the ground beef into 12 equal portions (approximately 2 ounces each). Lightly press each portion into a flat round about 3 inches across and roughly 1/2 inch thick. Do not overwork the meat. Season both sides of each patty with a light sprinkle of kosher salt and freshly ground black pepper, and brush or toss with Worcestershire sauce.

Cook patties

Heat a large skillet or griddle over medium-high heat and add the neutral oil. When shimmering, place patties in a single layer without crowding. Cook 2–3 minutes on the first side until a brown crust forms, press gently with a spatula for even contact, then flip. Top each patty with half a slice of cheddar (or fold slices to fit) and cook another 1–2 minutes until cheese melts and internal temperature reaches 160°F (71°C). Work in batches if needed.

Prepare buns

Split the slider buns and brush cut sides lightly with softened butter. Place buns, cut-side down, on a hot skillet or griddle for 30–60 seconds until golden and toasted. Remove and keep warm.

Assemble sliders

Spread about 1 teaspoon of Founders Sauce on the bottom half of each bun. Place a cheese-topped patty on the sauced bottom, add a small spoonful of caramelized onions, and one dill pickle chip. Add more sauce to the top bun if desired, then close. Repeat for all sliders.

Serve

Arrange sliders on a platter and serve immediately while warm. Pass extra Founders Sauce and pickles on the side.
