    Prepare the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Knead gently, wrap in plastic, and refrigerate for 30 minutes.

    Prepare the Filling

    In another bowl, combine the fresh fruit, brown sugar, cornstarch, and cinnamon. Gently toss to coat the fruit evenly. Set aside.

    Assemble the Basket

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut out circles to line a muffin tin or tartlet pan, pressing the dough into the bottom and up the sides. Fill each pastry shell with the fruit mixture.

    Beat the egg and brush it over the edges of the pastry. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the fruit is bubbling.
