    Prepare the Slaw

    In a large bowl, combine the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well and refrigerate for at least 30 minutes.

    Set Up Frying Stations

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal, paprika, salt, and pepper.

    Bread the Flounder

    Dredge each flounder fillet in flour, shaking off excess. Dip in the egg mixture, then coat with the cornmeal mixture, pressing gently to adhere.

    Fry the Fish

    In a large skillet, heat the oil over medium-high heat. Fry the breaded flounder fillets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    Toast the Texas toast slices until golden. On one slice, add a fried flounder fillet, top with slaw, pickled red onions, and a generous dollop of tartar sauce. Top with another slice of Texas toast.
