Prepare the Clams
Rinse the fresh clams under cold water and pat them dry with a paper towel.

Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. In a separate bowl, whisk together the egg and milk. Gradually add the wet ingredients to the dry ingredients until well combined.

Fry the Clams
Heat vegetable oil in a deep skillet over medium-high heat. Dip each clam into the batter, allowing excess to drip off, and carefully place them into the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Buns and Sides
While the clams are frying, prepare the fries according to package instructions. Toast the split-top buns lightly in a toaster or on a skillet.

Assemble the Clam Rolls
Place a generous amount of crispy fried clams onto the bottom half of each toasted bun. Drizzle with signature sauce and top with the other half of the bun.

Serve the clam rolls with fries and coleslaw on the side, along with extra signature sauce for dipping.
