Method
Golgappa (Puri) Shells

In a large bowl, combine semolina, all-purpose flour, salt, and baking soda. Mix thoroughly so the baking soda is evenly distributed.

Add 1 tablespoon oil and warm water gradually, mixing until a stiff but pliable dough forms. Knead for 4–5 minutes until smooth. If dough is sticky, add a little flour; if too dry, add a teaspoon of water at a time.

Cover the dough with a damp cloth and rest for 20–30 minutes. This helps semolina hydrate and makes rolling easier.

After resting, knead briefly. Divide into two portions. Roll each portion very thin on a lightly floured surface (about 1.5–2 mm thickness). Use a 2-inch (5 cm) round cutter to punch out 18 circles (you can re-roll scraps once).

Heat oil in a deep pan over medium-high heat until hot (about 350°F / 175°C). Test by dropping a small dough scrap; it should puff and rise to the top immediately.

Fry the puris in small batches: gently slide 4–6 rounds into the hot oil. Using a slotted spoon, press each puri slightly so it puffs up. Fry until golden brown and crisp on both sides, about 30–60 seconds per side.

Remove puris to a paper towel-lined tray to drain. Allow to cool completely; they will crisp further as they cool. Store in an airtight container if not using immediately.
Spiced Tamarind-Chaat Water (Imli Pani)

In a pitcher, whisk tamarind paste with 3 cups water until smooth and no lumps remain.

Add roasted cumin powder, chaat masala, black salt, regular salt, sugar or jaggery, finely chopped green chili, chopped coriander, and lemon juice. Stir to combine.

Taste and adjust seasoning: add more sugar/jaggery for sweetness, lemon for tang, or water to dilute. Chill in refrigerator for at least 30 minutes so flavors meld. Keep chilled until serving.
Potato Filling (Aloo Masala)

Heat 1 tablespoon oil in a small pan over medium heat. Add mustard seeds; when they begin to pop, add cumin seeds and sauté briefly for 10 seconds.

Add turmeric and red chili powder, stir for a few seconds, then add the mashed potatoes, salt and chaat masala. Mix thoroughly and cook for 1–2 minutes to incorporate spices.

Turn off heat and fold in chopped coriander. Allow the filling to cool to room temperature before stuffing the puris.
Tamarind-Date Sweet Chutney

Combine tamarind paste, date paste (or chopped dates), jaggery or brown sugar, red chili powder, salt and 1/4 cup water in a small saucepan.

Simmer over low heat for 4–6 minutes, stirring and mashing any date pieces, until thickened to a pourable chutney consistency. If too thick, add a tablespoon of water at a time.

Cool to room temperature. Taste and adjust sweetness or salt. Transfer to a serving bowl or squeeze bottle.
Mint-Coriander Green Chutney

Place mint, coriander, green chili, lemon juice, salt and 2 tablespoons water in a blender. Blend to a smooth paste, adding a little more water if necessary to reach a thick but pourable consistency.

Taste and adjust salt or lemon. Chill briefly before serving.
Assembly & Garnish

Place the cooled golgappa puris on a serving platter in a neat arrangement (18 pieces).

For each puri, gently make a small hole on the top with your thumb (careful not to crack the shell).

Spoon about 1 teaspoon of potato filling into each puri.

Add about 1/2 teaspoon of sweet tamarind-date chutney, then 1/2 teaspoon of mint-coriander chutney into each puri on top of the potato.

Sprinkle boondi, sev, pomegranate arils, chopped onion (if using), and chopped coriander over the filled puris for color and crunch.

Serve immediately so puris remain crisp. If preparing for later, keep shells airtight and chutneys/pani chilled; assemble just before serving.
