Prepare Cauliflower
Wash and thoroughly dry cauliflower. Cut into bite-sized florets, ensuring pieces are similar in size for even cooking (about 1 to 1.5 inches). Pat dry again with paper towels to remove surface moisture.
Make Batter
In a large bowl, whisk together all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Gradually add cold water while whisking until a slightly thick, smooth batter forms that will coat the florets (should be thick but still pourable). If batter is too thick, add up to 1 more tablespoon water; if too thin, add a little more flour/cornstarch.
Coat Cauliflower
Toss the dried cauliflower florets in the batter until each piece is evenly coated. Let coated florets rest 5 minutes so the coating adheres.
Heat Oil
Pour neutral oil into a deep skillet or pot to a depth of about 1 to 1.5 inches (or use a deep-fryer). Heat oil to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise immediately but not brown too fast.
Fry Cauliflower
Fry the battered florets in batches (do not overcrowd) for 3–4 minutes per batch, turning as needed, until golden brown and crisp. Use a slotted spoon to transfer fried florets to a wire rack or paper towel-lined tray. While hot, lightly sprinkle with 1/4 tsp salt to season. Keep warm in a 200°F (95°C) oven if frying multiple batches.

In a medium bowl, whisk together mayonnaise, sriracha, gochujang (or sambal), honey, rice vinegar, soy sauce, sesame oil, lime juice, minced garlic, and grated ginger until smooth and homogenous. Taste and adjust heat or sweetness: add more sriracha for heat or more honey for sweetness. Sauce should be creamy and pourable but thick enough to cling to cauliflower.
Warm Slightly (Optional)
For a more melded flavor, warm the sauce gently in a small saucepan over low heat for 1–2 minutes, stirring constantly. Remove from heat — do not boil.
Assembly & Garnish
Toss Cauliflower in Sauce
Place fried cauliflower in a large mixing bowl. Spoon the dynamite sauce over the hot florets (start with about three-quarters of the sauce and add more to taste). Gently toss with tongs or a large spoon until every piece is evenly coated but not soggy. If you prefer extra sauce, reserve the remainder for drizzling.
Plate and Garnish
Arrange sauced cauliflower on a serving platter. Sprinkle with sliced green onions, toasted sesame seeds, and chopped cilantro if using. Serve immediately with lime wedges for squeezing over the top.
Serving Suggestions
Serve as an appetizer, shareable snack, or over steamed rice for a main. Leftovers can be reheated in a 375°F (190°C) oven for 8–10 minutes to re-crisp before tossing in sauce again.
