Risotto Base
Prep
Bring the chicken or vegetable stock to a simmer in a saucepan and keep it hot over low heat.
Sauté aromatics
In a heavy-bottomed skillet or wide saucepan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the finely chopped onion and sauté until translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.
Toast rice
Add the Arborio rice and stir to coat with oil and butter. Cook 2 minutes, stirring, until edges of rice become translucent.
Deglaze
Pour in the dry white wine and cook, stirring, until mostly absorbed.
Cook risotto
Add 1/2 cup of the hot stock to the rice and stir frequently until mostly absorbed. Continue adding the stock in 1/2-cup increments, stirring frequently, allowing each addition to be largely absorbed before adding more. This process should take about 18–22 minutes total. The rice should be creamy and cooked through but still slightly al dente.
Finish
When rice is cooked, remove from heat and stir in the remaining 1 tablespoon butter, grated Parmesan, chopped parsley, lemon zest (if using), salt and pepper. Taste and adjust seasoning. Spread the risotto in a shallow tray or baking sheet and cool to room temperature, then refrigerate for at least 2 hours or until fully chilled (this firms the risotto for shaping).
Filling (optional)
If using fillings, cut fresh mozzarella into small cubes (about 1/2-inch). You can also mix small bits of cooked pancetta or ham into the chilled risotto. Keep filling portions ready for stuffing.
Forming the Balls
Moisten your hands with cold water to prevent sticking. Scoop about 2 tablespoons of chilled risotto (roughly a ping-pong ball size) into your palm, flatten slightly, place a mozzarella cube or a small pinch of pancetta in the center (if using), then enclose with risotto and roll into a smooth ball. Repeat and place balls on the tray. You should get about 24–28 balls depending on size.
Dust each ball lightly in flour, shake off excess, dip into beaten eggs, then roll in breadcrumbs until completely coated. For extra-crispy texture, double-coat: return to egg and breadcrumbs for a second layer.
Coating & Frying
Pour vegetable oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches. Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small breadcrumb — it should sizzle and brown in about 45–60 seconds.
Fry the risotto balls in batches (do not overcrowd) for 3–4 minutes, turning occasionally, until golden brown and crisp. Maintain oil temperature between 325–350°F (160–175°C) to ensure even cooking and prevent excessive oil absorption.
Using a slotted spoon, transfer fried balls to a paper towel-lined tray to drain. Keep warm in a 200°F (95°C) oven if frying in multiple batches.
To Serve
Serve crispy risotto balls hot with warm marinara sauce and fresh basil, or simply on their own as an appetizer. Garnish with extra grated Parmesan and chopped parsley if desired.
