Season salmon
Pat salmon dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
Sear salmon
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. When shimmering, add salmon fillets and sear 3–4 minutes per side until golden and just cooked through (internal temp ~125–130°F for medium). Remove salmon to a plate, let rest 3 minutes, then flake into large bite-sized pieces with a fork. Reserve skillet with any fond for the sauce.

Sweat onion and garlic
Reduce heat to medium. Add 1 tablespoon butter to the skillet used for salmon. Add the thinly sliced onion and a pinch of salt; cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.
Wilt spinach & add lemon
Add the baby spinach in handfuls, stirring until wilted. Once wilted, stir in the lemon zest and lemon juice. Season with the remaining 1/2 tsp salt and 1/4 tsp black pepper (adjust to taste).
Creamy Sauce
Build sauce
Pour 1/2 cup broth into the skillet to deglaze, scraping up browned bits. Stir in the heavy cream and bring to a gentle simmer over medium-low heat.
Finish sauce
Add the softened cream cheese, grated Parmesan, Dijon mustard, and red pepper flakes. Whisk or stir continuously until the cream cheese melts and the sauce is smooth and slightly thickened, about 3–4 minutes. If the sauce becomes too thick, add reserved pasta water a few tablespoons at a time until desired consistency is reached (you may not need the full cup). Taste and adjust seasoning.
Combine & Serve
Serve
Divide among plates or bowls and garnish with extra Parmesan if desired. Serve immediately.
