Crack the 8 large eggs into a medium mixing bowl. Add 1/2 cup whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Using a whisk or fork, beat vigorously until the mixture is homogenous, slightly frothy, and pale yellow (about 30–45 seconds). This incorporates air for lightness and ensures even seasoning.

For extra-silky texture, pour the beaten eggs through a fine mesh strainer into another bowl to remove chalazae and any thick strands. Use a spatula to push the liquid through; discard solids.

Pour the beaten eggs into the warm skillet. Let them sit undisturbed for 10–15 seconds until the edges just begin to set.
