Muddle Mint and Syrup

Place 8 fresh mint leaves and 0.75 oz simple syrup into a sturdy Collins glass (or mixing glass). Using a muddler, gently press and twist the mint leaves about 4–6 times just to release the aromatic oils. Do not pulverize the leaves — avoid shredding to prevent bitterness.

Add Lime Juice

Pour in 1 oz freshly pressed lime juice. Briefly stir to combine with the muddled mint and syrup, lifting the mint off the bottom so oils remain distributed.

Add Rum and Ice

Add 2 oz white rum to the glass. Fill the glass with crushed ice (about 1 cup) almost to the top, then stir briskly for 10–15 seconds to chill and slightly dilute the mixture.

Top with Soda and Finish

Top with about 2 oz chilled club soda, giving one gentle stir to incorporate. Taste and adjust: add a little more simple syrup if you prefer sweeter, or a splash more lime if brighter acidity is desired.

Garnish and Serve

Garnish with a lime wedge or wheel and a fresh mint sprig. Clap the mint sprig once between your palms (optional) to release aromatics before placing it in the glass. Serve immediately with a straw.
