Make honey syrup

Combine equal parts honey and very hot water (for this recipe: 0.5 oz honey + 0.5 oz hot water) and stir until fully dissolved. Cool to room temperature before using. This yields a pourable syrup that blends smoothly into the cocktail.

Build cocktail

Fill a highball or Collins glass with ice (about 1 cup). Pour 0.75 oz fresh yuzu juice (or the juice of a small Japanese grapefruit substitute) into a jigger, then add 0.5 oz honey syrup and 1.5 oz shochu. If using, add a 1/4 tsp pinch of sea salt to brighten the flavors. Stir gently in the glass to combine and chill the mixture for about 10–15 seconds.

Top with soda

Slowly top the mixed base with 3 oz cold club soda, pouring down the side of the glass if you want to preserve carbonation. Stir once gently with a bar spoon (3–4 turns) to integrate soda without flattening it.

Garnish and serve

Express the oils of a yuzu zest over the drink by holding the peel over the glass and giving it a quick twist, then drop it in or place a thin wheel of grapefruit on the rim. Serve immediately with a cocktail straw.
