Prepare & muddle
Muddle mint and sweetener
Place 6 fresh mint leaves into a sturdy mixing glass or cocktail shaker. Add 0.5 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle the mint about 4–6 times — press to release oils but avoid shredding the leaves, which can add bitterness.
Mix spirits & chill
Add alcohol and chill
Pour 3 oz chilled sake and 1 oz white rum into the shaker with the muddled mint mixture. Add a small handful of cracked or cubed ice (not the crushed ice used for final serving). Cap the shaker and shake gently for about 5–8 seconds to lightly chill and integrate flavors. The goal is to combine and slightly cool without over-diluting the delicate sake.
Assemble drink
Build the cocktail
Fill a highball or Collins glass with 1 cup crushed ice. Strain the shaken sake-rum mixture over the crushed ice, using a fine strainer if you want to catch small mint pieces. Top with 2 oz chilled club soda, pouring slowly to preserve effervescence.
Final mint flourish
Take the remaining 2 fresh mint leaves and clap them between your palms once to activate their aroma, then tuck them into the top of the drink. Garnish with a mint sprig and a lime wheel or wedge on the rim.
Serve
Serve immediately with a short straw. Optional: give the drink a gentle stir to lift the muddled mint through the glass before sipping. Recommend tasting and adjusting: add up to 0.25 oz more simple syrup if you prefer sweeter, or a splash more lime juice if you prefer brighter acidity.
