Peel and prepare garlic
Separate 6 fresh garlic cloves from the bulb. Trim off the root ends. Place the cloves under the flat side of a chef's knife and press down firmly to slightly crush each clove; this makes peeling easier. Remove and discard the papery skins.
Mince or thinly slice
Decide texture: for a bold, immediately pungent experience, finely mince the peeled cloves with a sharp knife (aim for a very fine mince). For a milder bite and a slightly sweeter mouthfeel, thinly slice the cloves. Use all prepared garlic in the same cut to ensure consistent flavor.
Season and macerate
Place the minced or sliced garlic in a small bowl. Add 1 tsp coarse salt, 2 tsp extra-virgin olive oil, and 1 tsp fresh lemon juice. Stir thoroughly to combine. Let sit at room temperature for 5–10 minutes to macerate; this softens raw garlic's sharpness and slightly blooms its flavors.
Adjust seasoning
Taste a small amount of the macerated garlic (use caution — raw garlic is potent). Add up to another 1/2 tsp lemon juice or a pinch more salt if desired. Grind fresh black pepper over the garlic (about 1 tsp or to taste) and stir in 1 tbs chopped fresh parsley if you like a herb note and visual contrast.
Serve
Spoon the seasoned raw garlic onto toasted bread slices or spread lightly over crackers. Because raw garlic is strong, use sparingly — a thin layer provides a vibrant, pungent hit. Alternatively, incorporate the macerated garlic directly into dressings, vinaigrettes, salsas, or into a bowl of hummus for an intense raw garlic flavor.
Storage and safety
If not using immediately, transfer the garlic mixture to a small airtight container and refrigerate up to 24 hours. Note: garlic stored in oil can present a botulism risk if left at room temperature — always refrigerate and use within recommended time. Bring to room temperature and stir before use.
