Prepare marinade

In a medium bowl, whisk together the white miso paste, mirin, soy sauce, sake, brown sugar, sesame oil, grated ginger, and minced garlic until smooth and homogenous. If using beef fat for extra richness (to emulate 'toro' mouthfeel), briefly warm it so it becomes soft and whisk it into the mixture until incorporated.

Adjust seasoning

Taste a small smear of the marinade (on a spoon). The mixture should be savory with a touch of sweetness and bright ginger notes. Adjust by adding a little more mirin or sugar for sweetness, or a dash more soy for saltiness. Set aside about 2 tablespoons of marinade for brushing during searing/finishing.

Trim and score

Trim any excess silver skin from the steak. If the steak is thicker than 1 inch, slice through to create a more even thickness or pound gently to about 3/4 inch. Lightly score the surface of the meat in a crosshatch pattern to help the marinade penetrate (don't cut deeper than 1/8 inch).

Marinate

Place the beef in a zip-top bag or shallow dish. Pour the miso-toro marinade over the beef, massaging to coat both sides. Reserve the 2 tablespoons of marinade kept aside earlier. Seal the bag or cover and refrigerate for 45 minutes to 2 hours. For a deeper flavor, marinate up to 4 hours but no longer than overnight to avoid overly firming the meat from the salt.

Bring to room temperature & season

Remove the beef from the refrigerator 30 minutes before cooking to come to near room temperature. Pat the beef lightly with paper towels to remove excess marinade (retain surface coating), then season both sides lightly with kosher salt and freshly ground black pepper just before cooking.

Sear

Heat a heavy skillet or cast-iron pan over high heat until shimmering. Add the neutral oil and swirl to coat. Place the steak in the pan and sear without moving for 2–3 minutes, until a deep brown crust forms. Flip and sear the other side 2–3 minutes for medium-rare (internal 125–130°F / 52–54°C). For thinner cuts reduce time accordingly. During the last 30–45 seconds of searing, brush the reserved 2 tablespoons of marinade onto the top of the steak to caramelize slightly (watch closely to prevent burning).

Rest and slice

Transfer the steak to a cutting board and let rest 8–10 minutes (this keeps juices). Slice thinly against the grain into 1/4-inch strips for serving. If using for buns, slice slightly thicker for texture.

Finish & Garnish

Prepare garnishes

While the beef rests, thinly slice scallion greens and whites. Lightly toast sesame seeds in a dry skillet over medium heat 1–2 minutes until fragrant. If using shiso or cilantro, stack and thinly slice into ribbons. Warm rice or buns.

Assemble

Arrange sliced miso toro beef on a platter or directly onto warm rice or buns. Sprinkle with sliced scallion whites and greens, toasted sesame seeds, and microgreens or shiso. Add pickled cucumber on the side if using. Serve with lemon or yuzu wedges to squeeze lightly over the beef just before eating.

To Serve

Serve each portion with steamed rice or place slices inside warmed buns. Provide extra miso glaze (from any remaining marinade boiled briefly to be safe) on the side for dipping. Enjoy immediately while warm.
