Warm milk and cream

In a medium saucepan, combine 1 cup whole milk and 1 cup heavy cream with 1/2 cup granulated sugar and a pinch of fine salt. Warm over medium heat, stirring occasionally, until sugar dissolves and the mixture is hot but not boiling (about 5–7 minutes).

Temper egg yolks

In a bowl, whisk 3 large egg yolks until smooth. Slowly pour about 1/3 of the hot milk mixture into the yolks in a thin stream while whisking constantly to temper them (prevents scrambling).

Cook custard

Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens enough to coat the back of the spoon (170–175°F / 77–80°C), about 3–6 minutes. Do not boil.

Finish and chill

Remove from heat, stir in 1 tsp vanilla extract. Strain the custard through a fine-mesh sieve into a bowl to remove any cooked bits. Let cool to room temperature, then cover and chill in the refrigerator at least 2 hours, preferably 4 hours or overnight. Chilling ensures a smooth, scoopable texture.

Churn / Freeze

If you have an ice cream maker: Pour chilled custard into the machine and churn according to manufacturer instructions until it reaches soft-serve consistency. If you do not have a machine: Whisk chilled custard vigorously for a minute, pour into a shallow freezer-safe pan, freeze for 30–45 minutes, then stir vigorously with a fork to break ice crystals; repeat every 30 minutes until partially frozen and creamy (about 2–3 hours total).

Fill molds

Spoon or pipe the churned/partially frozen ice cream into popsicle molds, leaving a small headspace for expansion. If using a loaf pan, line with plastic wrap or foil, spread ice cream to an even thickness, and freeze until very firm (4–6 hours). Insert wooden sticks: for molds, press sticks into the center when ice cream is partially frozen and holds shape (about 30–60 minutes); for loaf pan, insert sticks after the ice cream has firmed enough to support them (1–2 hours). Freeze until fully solid (at least 4 hours total or overnight).

Melt chocolate

When ice cream bars are fully frozen and ready, melt 200 g chopped bittersweet chocolate with 1 tbs coconut or neutral oil. Use a double boiler (bowl over simmering water) or microwave in 20–30 second bursts, stirring between bursts, until smooth and fluid. Chocolate should be warm but not hot (around 90–95°F / 32–35°C).

Dip bars

Working quickly, remove one bar from the mold or lift from loaf pan with foil/plastic wrap. Hold by the stick and dip into the melted chocolate, letting excess drip off. If the chocolate begins to thicken, gently rewarm briefly.

Add toppings

Immediately before the chocolate sets, sprinkle crushed cookies, chopped nuts, a drizzle of caramel, or a pinch of sea salt as desired so they stick to the coating. Place dipped bars upright on parchment paper or a wire rack to let the coating harden. Return to the freezer for 10–15 minutes to fully set.

Sticks and Molds

If using molds, follow the mold manufacturer’s instructions for freezing and stick insertion; ensure sticks are inserted when the ice cream is partially set so they stay centered. If using a loaf pan, cut into individual bars after the ice cream is fully frozen by lifting with foil/plastic wrap and slicing with a hot knife (run under hot water and dry between cuts). Insert wooden sticks into each cut bar and briefly refreeze to secure sticks before chocolate dipping.

Optional Mix-ins / Toppings

To incorporate mix-ins into the ice cream base, fold chopped toasted nuts or crushed cookies into the churned ice cream in the last 1–2 minutes of churning or into the ice cream when it is partially frozen and pliable. For swirls, spoon small dollops of caramel sauce into the molds or the loaf pan in layers and use a skewer to create a ripple. For toppings, apply them to the chocolate coating immediately after dipping so they adhere before the chocolate sets.
