Prepare watermelon
Cut the seedless watermelon into manageable wedges. Remove rind and white pith, then chop the red flesh into roughly 1-inch cubes until you have about 6 cups packed.
Optional: macerate to dissolve sugar
If using sugar, put the chopped watermelon in a large bowl, sprinkle the granulated sugar over it, toss gently, and let sit for 5 minutes. This helps dissolve the sugar into the fruit juices.
Blending & Straining
Working in batches if necessary, add the chopped watermelon to a blender with 1 cup cold water and the fresh lime juice. Blend on high until completely smooth, about 45–60 seconds per batch.
Taste the blended juice and adjust sweetness or acidity: add up to 1 additional teaspoon sugar if too tart, or another 1 tablespoon lime juice if it needs brightness. Blend 5–10 seconds more after adjustments.
Optional: For a silky-smooth juice, pour the blended mixture through a fine-mesh sieve or chinois into a large pitcher, pressing on solids with a spatula to extract as much liquid as possible. Discard pulp left in the sieve.
Chill & Serve
Stir the juice in the pitcher and refrigerate for at least 15 minutes to chill, or add the ice cubes directly into the pitcher for immediate serving (juice will dilute slightly).
Fill glasses with ice if desired, pour the watermelon juice over ice, and garnish each glass with a lime wheel and a couple of mint leaves. Serve immediately.
