Bring 4 cups of water to a rolling boil in a medium saucepan over high heat. Add 1 tablespoon kosher salt to the water — this seasons the pods as they cook.
Add 1 cup edamame (pods) to the boiling water. Stir once to separate and prevent sticking.
Boil the edamame for 3–5 minutes for frozen pods (if fresh, 2–4 minutes). Cook until the pods are bright green and the beans inside are tender when tested (bite one open to check). Do not overcook; they should remain slightly firm.
Drain the edamame in a colander and immediately rinse briefly with cold water or transfer to an ice bath for 30–60 seconds to stop cooking and preserve color (optional). Drain well.
Finishing
Place the drained edamame back into the saucepan or a serving bowl. Add 1 teaspoon toasted sesame oil and toss or shake the pan so the pods are lightly coated.
Sprinkle 1 teaspoon coarse sea salt (or flaky finishing salt) over the pods and toss to distribute. If using, add 1/4 teaspoon crushed red pepper flakes and toss again.
Serve warm or at room temperature. If desired, squeeze half a lime (about 1/2 unit) over the edamame for brightness. To eat, pop the beans from the pod into your mouth and discard the pods.
