Prepare cucumber ribbons
Wash the cucumber. Using a vegetable peeler or mandoline set to a thin setting, slice lengthwise into long thin ribbons, rotating the cucumber as you go until you reach the seeded core. Discard the center seeded portion or reserve for another use. Pat ribbons dry with paper towel to remove excess moisture.
Season rice
If using cooked rice, place 1 cup cooled sushi or short-grain rice in a bowl. Stir together 1 tbs rice vinegar, 1 tsp sugar and 1/4 tsp salt (reserve remaining salt for seasoning) until dissolved; fold into rice until evenly coated. Spread rice thinly on a plate to cool if still warm.
Prepare avocado filling
Halve and pit the avocado. Scoop flesh into a bowl and mash lightly with a fork leaving small chunks for texture. Stir in 1 tbs fresh lime juice, 1 tsp sesame oil, and the remaining 3/4 tsp salt. Fold in thinly sliced carrots, red bell pepper, and chopped cilantro (reserve a few leaves for garnish). Taste and adjust lime or salt as needed.
Assemble rolls
Lay a cucumber ribbon flat on a work surface. Place about 1 tablespoon of seasoned rice near one end of the ribbon (use rice sparingly — rice is optional and thin). Add about 1 tablespoon of the avocado mixture on top of the rice (or directly on the cucumber if skipping rice). Sprinkle lightly with toasted sesame seeds. Roll the cucumber tightly around the filling, finishing seam-side down. Repeat with remaining ribbons and filling. You should get about 8–10 small rolls.
Plate and garnish
Arrange rolls seam-side down on a serving plate. Drizzle 2 tsp light soy sauce over rolls lightly (or serve soy on the side). Garnish with remaining cilantro leaves and an extra sprinkle of toasted sesame seeds.
Dipping Sauce
Whisk together 2 tbs low-sodium soy sauce, 1 tsp rice vinegar, 1 tsp honey or maple syrup, 1/2 tsp grated ginger and 1/4 tsp chili flakes (if using) in a small bowl until honey dissolves. Taste and adjust sweetness or acidity as needed. Serve in a small dipping dish alongside the cucumber avocado rolls.
