Prepare bacon

Preheat oven to 200°C (400°F). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange 6 bacon strips in a single layer on the rack. Bake for 12–18 minutes, turning once if needed, until bacon is crisp to your preference. Remove and transfer to a paper-towel-lined plate to drain and cool slightly.

Prepare tomato and lettuce

While bacon cooks, wash and pat dry the lettuce leaves. Slice the tomato into 3–4 even slices about 1/4-inch (6–8 mm) thick. Sprinkle the tomato slices with 1/4 tsp kosher salt and 1/8 tsp freshly ground black pepper; set aside to rest for 2–3 minutes to bring out juices.

Toast or grill bread

Spread the unsalted butter evenly on one side of each bread slice (optional). Toast the bread slices in a skillet over medium heat, in a toaster, or under a broiler until golden and lightly crisp (about 1–2 minutes per side in skillet). If toasting in a skillet, place buttered side down to get an even golden surface; flip once and toast the other side if desired.

Assemble sandwich

Lay one slice of toasted bread buttered side down on a cutting board. Spread 1 tablespoon mayonnaise evenly on the top surface of that slice. Layer 3 bacon strips across the bread in a single layer. Top bacon with 1–2 tomato slices, then a lettuce leaf. Spread 1 tablespoon mayonnaise on a second slice of bread and place mayo side down over the lettuce to form the top of the first sandwich (this uses two bread slices). To make a 700 ml-sized portion reference (double-decker using 3 slices): spread the remaining 1 tablespoon mayonnaise on the third slice of bread; place it mayo-side down in the middle to create a double-decker style: take the assembled two-slice sandwich and place it on the center slice, stacking bacon/tomato/lettuce as desired (use remaining bacon, tomato, lettuce pieces to populate both layers evenly). Press gently to compact.

Finish and serve

Trim crusts if you prefer and use a sharp serrated knife to cut the sandwich diagonally into halves or quarters. Serve immediately with an optional pickle spear and potato chips on the side.
