Beef & Marinade
Trim and season
Trim excess fat and silver skin from the beef tenderloin/sirloin. Pat the beef dry with paper towels. Lightly season all sides with 1/2 tsp freshly ground black pepper.
Marinate briefly
In a shallow dish, combine 1 tablespoon soy sauce, 1 tablespoon mirin, 1 tablespoon sake, grated ginger, minced garlic and 1 teaspoon sesame oil. Place the beef in the dish and spoon marinade over it to coat. Marinate at room temperature for 10–20 minutes (do not exceed 30 minutes to keep the interior rare). Reserve any leftover marinade for finishing if desired (do not reuse marinade that touched raw meat unless boiled).
Sear the beef
Heat a heavy skillet or cast-iron pan over high heat until smoking hot. Add 2 tablespoons neutral oil and swirl to coat. Sear the beef on all sides: about 30–45 seconds per side to develop a deep brown crust while keeping the center rare. If the roast is thicker (1.5–2 inches), sear the sides and then quickly sear the flats 30–45 seconds each side. Use tongs to rotate; total searing time should not cook through the center.
Rest & chill
Transfer the seared beef to a cutting board. Loosely tent with foil and let rest 5 minutes at room temperature to redistribute juices, then transfer to the refrigerator for 10–15 minutes to firm slightly (this makes very thin slicing easier).
Citrus Ponzu & Finish
Prepare ponzu dressing
In a small bowl whisk together 3 tablespoons ponzu, 1 tablespoon lemon or yuzu juice, 1 teaspoon rice vinegar and 1 teaspoon sugar until sugar dissolves. Taste and adjust acidity or sweetness to preference. If you reserved unused marinade earlier, do not mix it in unless it has been boiled; use only fresh ponzu mixture.
Prepare garnishes
Toast sesame seeds in a dry skillet over medium heat 1–2 minutes until fragrant. Thinly slice scallions on a bias. If using daikon, grate and squeeze lightly to remove excess water. Slice shiso leaves or chop cilantro if using. Arrange microgreens or arugula on serving plates if desired.
Slice beef
Using a very sharp knife, trim any uneven ends from the beef and slice across the grain into paper-thin slices (about 1/8 inch / 3 mm). Aim for consistent thinness so the beef is almost translucent at the edges. Wipe the knife between passes if needed for clean cuts.
Assemble
Fan the thin beef slices on the prepared plate(s) over a bed of microgreens or directly on the plate. Spoon 1–2 teaspoons of the ponzu dressing over each portion of beef (you can also serve additional dressing on the side). Scatter toasted sesame seeds, sliced scallions, grated daikon and shiso/cilantro over the beef. Finish with a light pinch (about 1/8–1/4 teaspoon) of freshly ground black pepper and a few threads of toasted nori if using.
Serve
Serve immediately as an appetizer or light main. Beef tataki is best enjoyed cold to room temperature so flavors of the ponzu and garnishes are bright. Provide extra ponzu and a small dish of soy or wasabi for guests who want stronger seasoning or heat.
