Wagyu and seasoning
Bring to temperature
Remove the A5 Wagyu chuck roll from refrigeration and leave it uncovered on a plate at room temperature for 30–45 minutes. This reduces chill in the center so cooking is even and you avoid overcooking the fat-rich exterior.
Pat dry and score
Pat the surface thoroughly dry with paper towels. Using a very sharp knife, lightly score any thick fat cap in a shallow crosshatch (do not cut more than 1–2 mm). Scoring helps render fat and prevents cupping while keeping meat intact.
Season simply
Generously season all sides with fine sea salt (reserve about 1/4 tsp for finishing) and a light dusting of freshly ground black pepper. Because A5 wagyu is extremely flavorful, keep seasoning minimal and even.
Sear the chuck roll
Add 1 tablespoon neutral oil to the hot pan and swirl. Carefully place the chuck roll in the pan. Sear without moving for 60–90 seconds on the longest side until a deep brown crust forms. Rotate to another side and sear 45–60 seconds; repeat for all sides including edges until crusted. Because chuck roll is thicker, total searing time should be enough to brown but not fully cook through.
Baste with butter
Reduce heat to medium-low. Add 2 tablespoons unsalted butter, smashed garlic cloves, and thyme sprigs to the pan. Tilt the pan slightly and, using a spoon, continuously baste the meat with melted butter and aromatics for 60–90 seconds while turning the roast to coat and build flavor. This step adds gloss and flavor without prolonged direct heat.
Finish to temperature
For tender medium-rare, transfer the pan to a preheated 375°F (190°C) oven for 6–10 minutes depending on thickness, or continue cooking on the stovetop on very low heat while monitoring temperature. Use an instant-read thermometer inserted into the center: remove at 120–122°F (49–50°C) for rare, 125–128°F (52–53°C) for medium-rare. Note: with A5 wagyu you generally prefer rare–medium-rare to preserve texture and fat.
Rest
Transfer the chuck roll to a cutting board and loosely tent with foil. Rest 10–15 minutes to allow juices to redistribute and the internal temperature to rise ~3–5°F.
Slice
Using a very sharp carving knife, slice the wagyu chuck roll across the grain into thin 1/8–1/4 inch (3–6 mm) slices for maximum tenderness. Thicker slices can be served if desired, but thinner highlights the marbling and melt-in-mouth texture.
Optional finishing & serving
Arrange slices on a warmed platter. Sprinkle a small pinch of flaky finishing salt (reserved portion) over the slices to lift flavor. Add microgreens or watercress alongside for freshness.
Serve immediately with optional condiments: a small dish of soy sauce or ponzu, and a dab of freshly grated horseradish or wasabi for contrast. Because of the high fat content, small amounts of acidic or spicy condiments balance richness.
Leftovers: store cooled slices in an airtight container in the refrigerator up to 2 days. Reheat gently in a skillet over very low heat for 30–60 seconds per side or enjoy at room temperature.
