Form and season patties
Divide the ground chuck into two equal portions (about 8 oz each). Gently form each portion into a loose ball then flatten into patties about 3/4 inch thick and slightly larger than the buns. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly. Season both sides with kosher salt and freshly ground black pepper and brush or sprinkle each patty with 1/2 teaspoon Worcestershire sauce (divide the 1 tsp between the two).

Rest briefly
Let the formed patties rest at room temperature while you prepare other components, 10–15 minutes. This helps them cook more evenly.

Cook patties
Heat a heavy skillet, cast-iron pan, or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and swirl to coat. Place patties in the pan (do not overcrowd). Cook without pressing for 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes more for medium (adjust timing for desired doneness). During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan with a lid or foil to melt the cheese.

Prep produce
Thinly slice the red onion into rings and separate into half-rings if preferred. Slice the tomato into 1/4-inch slices. Rinse and dry the butter lettuce leaves. Keep ingredients chilled until assembly.

Make the sauce
In a small bowl combine 1/4 cup mayonnaise, 2 teaspoons ketchup, 1 teaspoon Dijon mustard, 1 tablespoon sweet pickle relish, 1/2 teaspoon hot sauce (optional), and 1/4 teaspoon smoked paprika. Stir until smooth and taste; adjust seasoning with a pinch of salt or more hot sauce if desired. Refrigerate until ready to use.

Assemble burger
Spread a generous tablespoon of the signature sauce on the bottom bun. Place one lettuce leaf, then the cheese-topped patty, two slices of crisp bacon (arrange slightly overlapped), a tomato slice, and some red onion rings. Spread a little sauce on the top bun and close the burger. Repeat for the second burger.

Serve immediately while hot with your preferred sides. If preparing for sharing, slice in half and secure with a toothpick if desired.
