1. Sauté the Aromatics
In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
2. Add Spices
Stir in the curry powder, turmeric, cumin, and garam masala. Cook for 1-2 minutes to toast the spices.
3. Cook Tomatoes
Add the diced tomato and cook until softened, about 3-4 minutes.
4. Add Coconut Milk
Pour in the coconut milk and stir well. Bring the mixture to a simmer.
5. Add Shrimp
Add the shrimp to the pan. Cook for 5-7 minutes, or until the shrimp are pink and cooked through. Season with salt and black pepper to taste.
6. Serve
Serve hot over rice or with naan.
