Prepare the Spinach

Blanch the spinach in boiling water for 2-3 minutes. Drain and immediately immerse in ice water. Once cooled, blend to a smooth puree.

Cook the Base

In a pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and sauté until golden brown.

Add Aromatics

Stir in the ginger-garlic paste and green chili, cooking for about 1 minute until fragrant.

Incorporate Tomatoes and Spices

Add the pureed tomato and cook until the oil starts to separate. Stir in turmeric powder, coriander powder, and salt. Cook for another 2 minutes.

Combine Spinach and Peas

Add the spinach puree and green peas to the pan. Mix well and let it simmer for 5-7 minutes.

Finishing Touches

Add the paneer cubes gently into the mixture. Stir in the heavy cream and garam masala, cooking for an additional 2-3 minutes.

Remove from heat and serve hot with naan or rice.
