Cook the wheat noodles according to package instructions, drain, and set aside.

Thinly slice the carrot, bell pepper, green onion, and cabbage. Mince the ginger and garlic.

In a pot, heat a tablespoon of oil over medium heat. Add the minced garlic and ginger, sauté until fragrant. Add the chicken breast and cook until browned and fully cooked. Remove from the pot and shred the chicken.
