In a large pot, bring the beef or vegetable broth to a boil. Add minced garlic, ginger, soy sauce, and chili paste. Let it simmer for about 10 minutes.
Add the egg noodles to the boiling broth and cook according to package instructions until al dente. Usually about 5-7 minutes.
Once the noodles are cooked, add the sliced beef, julienned carrots, and sliced bell pepper to the pot. Cook for an additional 5 minutes, or until the beef is cooked through.
