Samosas Preparation

Make the Dough

In a mixing bowl, combine all-purpose flour and salt. Gradually add water to form a soft dough. Cover and let it rest for 30 minutes.

Prepare the Filling

Boil the potatoes until soft. Peel and mash them. In a pan, heat oil and add cumin seeds, chopped onions, and green chili. Sauté until onions are translucent. Add mashed potatoes, peas, coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for 5 minutes. Allow the filling to cool.

Shape the Samosas

Divide the dough into small balls. Roll each ball into a thin oval. Cut it in half to form two semicircles. Take one semicircle, form a cone by folding it and sealing the edge with water. Fill the cone with the filling and seal the open edge by pinching it tightly.

Fry the Samosas

Heat oil in a deep frying pan. Once hot, carefully add the samosas and fry until golden brown on all sides. Remove and drain on paper towels.

Chickpea & Vegetable Curry Preparation

Cook the Curry

In a pan, heat oil. Add chopped onions and sauté until golden. Add ginger-garlic paste and sauté for 1 minute. Then add chopped tomatoes and green chili, cooking until tomatoes soften.

Add Chickpeas

Add cooked chickpeas, cumin powder, salt, and water. Stir everything together and let it simmer for about 10 minutes. Garnish with chopped coriander leaves.

Prepare the Yogurt

In a bowl, whisk yogurt, sugar, and salt together until smooth. Adjust the sugar and salt to taste.
