Preparation of Oleo Saccharum

Make Berry Oleo Saccharum

In a bowl, combine fresh or frozen berries (such as raspberries or blueberries) with sugar in a 1:1 ratio. Muddle the berries gently to release their juices, then let the mixture sit for at least 30 minutes to allow the sugar to dissolve and the oils to infuse.

Make Lime Oleo Saccharum

Zest several limes and combine the zest with sugar in a bowl in a 1:1 ratio. Muddle slightly and let sit for at least 30 minutes until the oils are extracted.

Tea Preparation

Brew Blue Jasmine Tea

Boil water and steep the rich blue jasmine organic tea for about 5 minutes. Once brewed, allow it to cool down to room temperature.

Mixing the Drink

Combine Ingredients

In a cocktail shaker, combine 2 oz of gin, 1 oz of pear liqueur, 0.5 oz of lime juice, 0.5 oz of berry oleo saccharum, and 0.5 oz of lime oleo saccharum.

Add Tea

Add 4 oz of the cooled blue jasmine tea to the shaker.

Shake

Fill the shaker with ice and shake vigorously for about 15 seconds until well mixed and chilled.

Strain and Serve

Strain the mixture into a chilled glass over fresh ice. Optionally, garnish with a slice of lime or a few berries.
