Select ripe Sauvignon Blanc grapes and harvest them. Ensure the grapes are free from any mold or rot.

Crush the grapes gently to extract the juice while separating the skins and seeds.

Transfer the juice into a fermentation vessel, add yeast and stir well. Cover the vessel and let it ferment at a controlled temperature of around 18°C for 2-3 weeks.

Fermentation

Once fermentation is complete, siphon the wine off the sediment into a clean vessel. This process is called racking.

Racking

Allow the wine to settle for another few weeks to clarify. You may add sulphites to prevent oxidation.

Clarification

Once clarified, bottle the wine in sterilized bottles and cork them. Store in a cool, dark place.
