Prepare the Taco Filling

    Cook the Lentils

    In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed.

    Sauté the Aromatics

    While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

    Season the Lentils

    Once the lentils are cooked, add them to the skillet with the sautéed onions and garlic. Stir in the cumin, smoked paprika, chili powder, salt, and black pepper. Cook for another 5 minutes, stirring occasionally to combine the flavors.

Assemble the Tacos

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, or until pliable.

    Fill the Tacos

    Take a warm tortilla and spoon a generous amount of the lentil filling into the center. Top with sliced avocado and a sprinkle of fresh cilantro.

    Serve the tacos with lime wedges on the side for squeezing over the top before eating.
