Prepare Acid-adjusted Pineapple Juice
To make acid-adjusted pineapple juice, blend fresh pineapple chunks with a bit of lime juice to taste, then strain to remove solids. Adjust acidity by adding more lime juice until the flavor is balanced.

Prepare Guajillo Pepper
Toast the guajillo pepper in a dry skillet over medium heat for about 1-2 minutes until fragrant. Remove from heat and soak in hot water for about 10 minutes to soften. Blend with a small amount of water until smooth and set aside.

Mix the Cocktail
In a shaker, combine 2 oz of Olmeca Altos Blanco Tequila and 1 oz of the acid-adjusted pineapple juice. Add 1 tsp of the prepared guajillo pepper puree and shake well with ice.

Strain and Serve
Strain the cocktail into a chilled glass. Garnish with a sprinkle of Chimayo salt on top for a flavorful finish.
