Mahi Mahi Preparation

Marinate the Mahi Mahi
In a shallow dish, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the Mahi Mahi fillets and turn to coat. Cover and refrigerate for at least 30 minutes.

Baja Sauce Preparation

Make the Baja Sauce
In a mixing bowl, combine mayonnaise, sour cream, lime juice, chopped cilantro, garlic powder, and salt. Mix well until all ingredients are fully incorporated. Adjust salt to taste and set aside.
Arbol Salsa Preparation

Prepare the Arbol Salsa
In a dry skillet, toast the dried Arbol chiles over medium heat for about 2-3 minutes until fragrant. Remove from heat and let cool. Once cooled, remove the stems and seeds, then chop them finely. In a bowl, combine the chopped chiles, diced tomatoes, chopped onion, minced garlic, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow flavors to meld.
