Cut the jalapeño peppers in half lengthwise and remove the seeds and membranes for a milder flavor.

In a bowl, combine the cream cheese, sharp cheddar cheese, crumbled bacon, Chimayo chili powder, chopped green onions, garlic powder, salt, and black pepper. Mix until well combined.

Using a spoon, fill each jalapeño half with the cheese and bacon mixture.

Place the stuffed jalapeños on a baking sheet lined with parchment paper.
