Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C) while you prepare the jalapeños.

  2. 2

    Prepare the Jalapeños

Cut the jalapeño peppers in half lengthwise and remove the seeds and membranes for a milder flavor.

  3. 3

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and let them cool, then crumble into small pieces.

  4. 4

    Mix the Filling

In a bowl, combine the cream cheese, sharp cheddar cheese, crumbled bacon, Chimayo chili powder, chopped green onions, garlic powder, salt, and black pepper. Mix until well combined.

Assembly

  1. 5

    Stuff the Jalapeños

Using a spoon, fill each jalapeño half with the cheese and bacon mixture.

  2. 6

    Arrange on Baking Sheet

Place the stuffed jalapeños on a baking sheet lined with parchment paper.

Cooking

  1. 7

    Bake the Jalapeños

Bake in the preheated oven for about 20-25 minutes, or until the jalapeños are tender and the cheese is bubbly and golden.

  2. 8

    Serve

Remove from the oven and let them cool for a few minutes before serving. Enjoy your delicious jalapeño poppers!
