Add the Flour
Once the mixture is boiling, remove it from heat and stir in the flour until it forms a smooth ball of dough.

Incorporate the Eggs
Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until fully incorporated.

Heat the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch long strips directly into the hot oil, cutting them with scissors.

Fry the Churros
Fry the churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Cinnamon Sugar Coating

Mix the Cinnamon Sugar
In a shallow bowl, mix together the granulated sugar and ground cinnamon.

Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.

Remove from heat and add the chocolate chips, stirring until melted and smooth. Stir in the vanilla extract.
