Method

Prepare the Base

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce to low heat. Cook for 18-20 minutes or until water is absorbed. Fluff with a fork and set aside.

    Prepare the Black Beans

    Drain and rinse the black beans under cold water. In a small saucepan, heat the beans over medium heat until warmed through, about 5 minutes.

Prepare the Protein

    Cook the Chicken

    If using chicken, grill or sauté seasoned chicken breast until fully cooked, approximately 6-8 minutes per side, depending on thickness. Let rest for a few minutes before dicing.

    Cook the Ground Beef

    If using ground beef, brown in a skillet over medium heat, breaking it up with a spatula until no longer pink, about 5-7 minutes. Drain excess fat.

    Prepare the Tofu

    For tofu, press to remove excess moisture, then cut into cubes. Sauté in a pan with a bit of oil until golden brown on all sides, about 8-10 minutes.

Make the Salsa

    Mix the Salsa Ingredients

    In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, salt, and pepper. Stir well to combine and set aside.

Assemble the Burrito Bowl

    Layer the Ingredients

    In a bowl, start with a base of rice, followed by black beans, your choice of protein, and top with the salsa mixture.
