Preparing the Oysters

Shucking the Oysters
Using an oyster knife, carefully shuck each oyster to remove the top shell. Ensure to keep the oyster in its shell and retain as much of the liquid as possible. Discard the top shell.

Fill a shallow serving platter with crushed ice. Place the shucked oysters on top of the ice to keep them cold.
Making the Mignonette Sauce

Combining Ingredients
In a small bowl, combine red wine vinegar, finely chopped shallots, and crushed black peppercorns. Mix well to incorporate all the flavors.

Allow the mignonette sauce to sit for at least 15 minutes before serving to let the flavors meld together.

Cut the lemon into wedges for serving alongside the oysters.
