Braised Beef

Prepare the Beef
In a large pot, combine the chuck roast, beef broth, dried guajillo chiles, garlic cloves, cumin, oregano, salt, black pepper, onion, and bay leaves. Bring to a boil over medium-high heat.

Reduce heat to low, cover the pot, and simmer for about 3 hours, or until the beef is tender and easily shredded.

Assemble Flautas

Prepare Tortillas
In a skillet, heat a small amount of oil and warm the flour tortillas, one at a time, until soft.

Fill the Tortillas
Place 2 tablespoons of shredded beef and a sprinkle of Oaxaca cheese in the center of each tortilla.

Roll the Flautas
Carefully roll the tortillas tightly around the filling and secure with a toothpick if needed.

Fry the Flautas
In a large skillet, heat vegetable oil over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side.
Beef Consommé

Prepare the Consommé
In a saucepan, combine 2 cups of the reserved beef broth with 2 cups of shredded braised beef. Heat until warm.
