Beef Consommé

Method

Braised Beef

  1. 1

    Prepare the Beef

In a large pot, combine the chuck roast, beef broth, dried guajillo chiles, garlic cloves, cumin, oregano, salt, black pepper, onion, and bay leaves. Bring to a boil over medium-high heat.

  2. 2

    Braised the Beef

Reduce heat to low, cover the pot, and simmer for about 3 hours, or until the beef is tender and easily shredded.

  3. 3

    Shred the Beef

Once cooked, remove the beef from the pot and shred it using two forks. Set aside and strain the broth to remove solids.

Salsa Verde

  1. 4

    Prepare the Salsa

In a pot, bring water to a boil and add tomatillos and jalapeño. Cook for about 5 minutes until soft. Drain and let cool.

  2. 5

    Blend the Salsa

In a blender, combine cooked tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning as needed.

Assemble Flautas

  1. 6

    Prepare Tortillas

In a skillet, heat a small amount of oil and warm the flour tortillas, one at a time, until soft.

  2. 7

    Fill the Tortillas

Place 2 tablespoons of shredded beef and a sprinkle of Oaxaca cheese in the center of each tortilla.

  3. 8

    Roll the Flautas

Carefully roll the tortillas tightly around the filling and secure with a toothpick if needed.

  4. 9

    Fry the Flautas

In a large skillet, heat vegetable oil over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side.

Beef Consommé

  1. 10

    Prepare the Consommé

In a saucepan, combine 2 cups of the reserved beef broth with 2 cups of shredded braised beef. Heat until warm.
