    Prepare the Meat

    Cut the beef chuck roast and brisket into large chunks. Season with salt and black pepper.

    Sear the Meat

    In a large pot, heat some oil over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until translucent.

    Combine Ingredients

    Return the seared beef to the pot. Add bay leaves, cumin, oregano, and enough water to cover the meat. Bring to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours or until the meat is tender.

    Strain the Broth

    Once the meat is cooked, remove it from the pot. Strain the broth and set aside to be used as consommé.

Salsa Verde

    Prepare Tomatillos

    Remove husks from tomatillos and rinse under warm water.

    Blend Salsa

    In a blender, combine tomatillos, green chili, cilantro, lime juice, and salt. Blend until smooth.

Assembly

    Shred the Meat

    Shred the cooked beef into small pieces.

    Melt Cheese

    In a pot, gently heat the shredded beef with Oaxaca and Chihuahua cheese until the cheese melts.

    Serve

    Serve the melted cheese and beef mixture in bowls with beef consommé. Drizzle with salsa verde.
