Method

Prepare Fritters

Mash the Black Beans

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Mix Ingredients

Add the cooked quinoa, chopped onion, minced garlic, cumin, paprika, salt, pepper, and flour to the mashed beans. Mix until well combined.

Form Fritters

Shape the mixture into patties, about 1/2 inch thick.

Cook Fritters

Heat olive oil in a skillet over medium heat. Cook the fritters for about 4-5 minutes on each side or until golden brown.

Prepare Sauce

Mix Sauce Ingredients

In a small bowl, combine mayonnaise, ketchup, hot sauce, lime juice, and garlic powder. Mix well until smooth.

Assemble Sandwich

Layer the Ingredients

On a plate, place a lettuce leaf, followed by a fritter, sliced tomato, onion, pickles, and a generous drizzle of the Virgin Island sauce on top.

Top with another lettuce leaf and serve immediately.
