Gelato Preparation
In a medium saucepan, combine milk, heavy cream, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.
Add Flavoring
Remove from heat and stir in your choice of seasonal fruit puree for sorbet or any other flavoring for gelato (e.g., chocolate, coffee, etc.). Let the mixture cool to room temperature.
Chill the Mixture
Once cooled, cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.
Churn the Gelato/Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze Until Firm
Transfer the gelato or sorbet to an airtight container and freeze for at least 4 hours or until firm before serving.
