Make the Cheesecake Base

Preheat the oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the Base

Bake the crust in the preheated oven for 10 minutes. Remove and let it cool.

Prepare the Labneh Filling

In a large mixing bowl, beat the labneh and cream cheese until smooth. Add sugar, vanilla extract, eggs, and lemon juice. Mix until well combined and smooth.

Combine and Bake

Pour the labneh filling over the cooled crust. Spread it evenly and smooth the top. Bake in the oven for 45-50 minutes or until set and the edges are lightly golden.

Cool and Chill

Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then refrigerate for at least 4 hours or overnight to set completely.

Serve

Before serving, top the cheesecake with chopped bastilla nuts and serve with scoops of vanilla gelato.
