Spread 1 tablespoon of butter on one side of each slice of sourdough bread.

Prepare the Bread

On the unbuttered side of two slices of bread, layer the sharp cheddar and Gruyère cheese. Drizzle honey and spread Dijon mustard over the cheese. Sprinkle with fresh thyme, salt, and black pepper. Top with the remaining slices of bread, buttered side out.

Assemble the Sandwich

Preheat a skillet over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

Remove the sandwiches from the skillet, cut in half, and serve hot.
