Chill equipment
Place the mixing bowl and beaters (or whisk attachment) in the refrigerator for at least 15–20 minutes before beginning. Cold equipment helps the cream whip more quickly and hold peaks.
Combine dry flavorings (if using cocoa)
If you want a chocolate-flavored whipped topping, sift the unsweetened cocoa powder with the confectioners' sugar into a small bowl to remove lumps and ensure even distribution.
Begin whipping
Pour the 2 cups of heavy whipping cream into the chilled mixing bowl. Start whipping on low speed (or whisk gently by hand) for about 30 seconds to incorporate air, then increase to medium-high.
Add sugar and vanilla
When the cream begins to thicken and soft peaks form (the cream holds a loose, rounded peak that droops), add the confectioners' sugar and vanilla extract. If making chocolate whipped cream, add the sifted cocoa powder now as well. If using a stabilizer (cream stabilizer or 1 tsp instant pudding mix), sprinkle it in at this stage.
Whip to desired consistency
Continue whipping on medium-high until medium to firm peaks form, about 1–2 more minutes. Medium peaks hold shape but the tip curls over; firm peaks stand straight up. Do not overwhip — if the cream starts to look grainy, stop immediately to avoid turning it into butter.
Taste and adjust
Taste a small amount and adjust sweetness or vanilla if needed by gently folding in an additional 1/2 teaspoon confectioners' sugar or a drop more vanilla, being careful not to overwork the cream.
Spread or pipe onto pie
Use immediately to spread over your prepared chocolate cream pie filling, or transfer the whipped topping to a piping bag fitted with your preferred tip and pipe decorative swirls. If not using right away, refrigerate covered for up to 24 hours; give a brief re-whip by hand or with the mixer on low if it loses volume.
