Heat a large skillet over medium-high heat and add 2 tbs olive oil.

When oil shimmers, add the diced onion and sauté for 3–4 minutes until translucent and beginning to soften.

Add the diced red bell pepper and zucchini; cook 4–5 minutes more, stirring occasionally, until vegetables start to brown at the edges.

Stir in the sliced mushrooms and corn kernels. Cook 3–4 minutes until mushrooms release moisture and the corn is lightly toasted.

Add the minced garlic, ground cumin, smoked paprika, chili powder, kosher salt, and black pepper. Cook 1–2 minutes, stirring, until fragrant.

Fold in the chopped spinach and cook 1–2 minutes until wilted. Remove skillet from heat and stir in fresh lime juice and chopped cilantro. Taste and adjust seasoning if needed. Keep warm while you prepare the eggs.

Eggs & Add-ins

Scrambled Eggs (soft and creamy)

Crack the 4 eggs into a bowl, add 2 tbs milk or water, 1/2 tsp salt, and 1/4 tsp black pepper. Whisk until combined and slightly frothy.

Heat a nonstick skillet over medium-low heat and add 1 tbs butter or oil. Let it warm but not brown.

Pour the beaten eggs into the pan. Let them sit undisturbed for 10–15 seconds, then gently stir with a spatula, scraping the bottom and folding eggs over. Cook slowly, removing pan from heat periodically to avoid overcooking, until eggs are soft, slightly runny, and creamy — about 3–4 minutes total. They will continue to set off the heat.

If using, sprinkle the crumbled queso fresco or feta into the eggs just before finishing and fold gently to combine. Taste and adjust salt/pepper if needed. Keep eggs warm.

Tortillas & Assembly

Warm the tortillas: heat a dry skillet over medium-high heat and warm each tortilla 20–30 seconds per side until pliable and lightly charred in spots. Alternatively, wrap stack in foil and heat in a 350°F (175°C) oven for 8–10 minutes.

Prepare avocado: slice or mash the avocado with a pinch of salt and a squeeze of lime.

Assemble tacos: place a warmed tortilla on a plate. Spoon about 2–3 tbs of the veggie filling down the center, then top with a generous portion of scrambled eggs (about 1/2 cup).

Add toppings: top with sliced or mashed avocado, 1–2 tbs salsa, a sprinkle of crumbled queso if desired, a few cilantro leaves, and a drizzle of hot sauce if using.

Serve immediately with lime wedges on the side for squeezing. Repeat to make remaining tacos.
