Sushi Rice

    Rinse rice

    Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, gently swishing, until the water runs nearly clear (about 4–6 rinses). Drain for 10 minutes.

    Cook rice

    Combine the rinsed rice and 2.25 cups water in a heavy pot with a tight-fitting lid (or rice cooker). If using stovetop: bring to a boil over medium-high heat, then reduce to low, cover, and simmer 13 minutes. Remove from heat and let rest, covered, for 10 minutes.

    Season rice

    While rice rests, warm 3 tbs rice vinegar, 1.5 tbs sugar, and 1 tsp fine sea salt in a small saucepan over low heat just until sugar dissolves (do not boil). Transfer rice to a shallow wooden or heatproof bowl. Pour the vinegar mixture evenly over the rice and fold gently with a wooden paddle or spatula to combine and cool. Fan the rice while folding to help it gloss and reach slightly below room temperature (about 10 minutes). Keep covered with a damp towel until ready to use.

Roll Filling & Assembly

    Prepare ingredients

    Cut sushi‑grade salmon into long thin strips (about 1/2 inch wide). Seed and julienne cucumber; thinly slice avocado. Lay out 4 nori sheets on a work surface. Have a small bowl of cool water ready to wet your hands and the knife to prevent sticking.

    Make spicy mayo (optional)

    In a small bowl, mix 3 tbs Japanese mayonnaise with 1 tsp Sriracha (adjust heat to taste). This will be used inside the rolls and for garnish if desired.

    Assemble inside-out roll (uramaki) method

    Wrap your bamboo mat in plastic wrap. Place one nori sheet shiny side down on the mat. With wet hands, take about 3/4 cup seasoned sushi rice and evenly spread it over the entire nori sheet to a thin layer (~1/4-inch). Sprinkle about 1–2 tbs tobiko evenly over the rice (this creates the tobiko exterior). Carefully flip the nori/rice/tobiko assembly so the rice/tobiko side faces the mat and the nori is on top.

    Add fillings

    Lift the edge of the nori nearest you and place a thin line of salmon strips (about 2 oz worth), a few cucumber julienne, and 2–3 slices of avocado along the center lengthwise. If using spicy mayo inside, add a thin line (about 1 tbs) on top of the fillings.

    Roll and shape

    Using the bamboo mat, carefully roll the assembly away from you, applying even pressure to form a firm cylinder so the rice and tobiko end up on the outside. Squeeze gently along the length with the mat to shape the roll into a tight tube. Unwrap the roll from the mat.

    Coat edges with tobiko

    If any areas of the rice lack tobiko, press a few additional pinchfuls of tobiko onto those spots so the exterior is well coated. Lightly press 1 tsp toasted sesame seeds along one edge if using.

    Repeat

    Repeat the assembly process to make 3 more rolls (total 4 rolls) using remaining rice, nori, salmon, cucumber, avocado, and tobiko.

Cutting & Serving

    Slice rolls

    Wet a very sharp knife in the small bowl of water, then dry it with a clean towel. Position the roll and slice into 8 equal pieces with a single smooth motion; wet the knife between cuts to keep slices clean. Repeat for each roll. Expect roughly 32 pieces total (4 rolls × 8).

    Plate and garnish

    Arrange the tobiko salmon roll pieces on a platter. Drizzle or pipe a little spicy mayo on top of each piece if desired, and place a small dot of tobiko on each for extra color. Serve with soy sauce, pickled ginger, and wasabi on the side.

    Storage note

    Best eaten immediately. If storing, cover tightly and refrigerate up to 24 hours; note that rice texture will firm and nori may soften.
