    In a bowl whisk together 1/2 cup low-sodium soy sauce, 2 tbsp oyster sauce, 1 tbsp mirin (or Shaoxing wine), 1 tsp sugar and 1 tsp sesame oil until sugar dissolves.

    Prepare cornstarch slurry

    In a separate small bowl, combine 1 tbsp cornstarch with 1/4 cup cold water and stir until smooth. Set both sauce and slurry aside.

    Slice and tenderize

    Trim any excess fat from 1 lb flank or skirt steak and slice very thinly against the grain into 1/8- to 1/4-inch strips. If using baking soda for extra tenderness, sprinkle 1/4 tsp baking soda over the sliced beef, toss to coat, let sit 10 minutes, then rinse lightly and pat dry. (Optional step.)

    Coat beef

    Place the sliced beef in a bowl, add 2 tbsp cornstarch and toss until evenly coated. This creates a thin velveting that helps the beef sear and remain tender.

Vegetables & Aromatics

    Prep broccoli

    Cut broccoli into bite-sized florets. If stalks are included, peel the tough exterior, slice thinly, and add to florets so they cook evenly.

    Bring a large pot of salted water to a boil. Add broccoli and cook 1 to 1 1/2 minutes until bright green and just tender.
