Preparing the Boneless Wings

Cut the Chicken
Cut the boneless chicken breasts into bite-sized pieces, approximately 1 inch each.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.

Bread the Chicken
Dip each piece of chicken into the egg mixture, allowing excess to drip off. Then, coat it in the flour mixture, pressing lightly to ensure the coating sticks.

Heat the Oil
In a large, deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Make the Sauce
In a small saucepan over medium heat, combine hot sauce, honey, and butter. Stir until the butter is melted and the mixture is well combined. Add garlic powder and brown sugar, stirring to dissolve.

Once the wings are fried, transfer them to a large bowl. Pour the hot sauce mixture over the wings and toss until evenly coated.

If using a dry rub, combine the dry rub seasoning mix with the fried wings in a separate bowl and toss until evenly coated.
