Walleye Preparation

Method

Walleye Preparation

  1. 1

    Prepare the Walleye

Rinse the walleye fillets under cold water and pat them dry with paper towels.

  2. 2

    Coat the Fish

In a bowl, mix together the flour, cornmeal, salt, black pepper, paprika, and garlic powder. In another bowl, whisk the egg and milk together. Dip the walleye fillets first into the egg mixture, then dredge in the flour mixture until fully coated.

  3. 3

    Fry the Fish

Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated walleye fillets, frying for about 4-5 minutes per side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Taco Assembly

  1. 4

    Warm the Tortillas

In a dry skillet, heat the flour tortillas for about 30 seconds on each side until warm and pliable.

  2. 5

    Assemble the Tacos

Place a fried walleye fillet on each warm tortilla. Top with shredded cabbage, a spoonful of Pico de Gallo, and fresh cilantro. Squeeze fresh lime juice over the top.

  3. 6

    Prepare the Sides

Combine the sour cream with the taco seasoning in a small bowl and mix well. Serve alongside the tacos with tortilla chips.
